Banana Cup Cake

INGREDIENTS:                          Units

All purpose Flour 585 grams
Mango Flour 65 grams
Baking Powder 40 grams
Baking Soda 10 grams
Salt 3 grams
Vanilla Essence 5 grams
Whole egg 250 grams
Vegetable oil 100 grams
Butter 100 grams
Evaporated Milk 250 grams
Banana Fruit 400 grams



  1. Peel banana fruit and weigh required amount, add butter and salt, and mix for 10 minutes.
  2. Add mango flour, all purpose flour, milk, baking soda and baking powder, and mix for 3 minutes.
  3. Add eggs, vegetable oil, vanilla essence and mix for 7 minutes.
  4. Pour mixture in muffin pans and bake for 20 minutes.
  5. Mixture dough weight is about 40 grams each.
  • Baking temp: 180oC; Baking time: 20 minutes
  • Yield: 44 pieces
